I ake a lot of cold salad's that include hard-boiled eggs - potato salad, pasta salad, etc. Freeze whole eggsby removing them from the shells, and mixing them well before freezing. They can be kept frozen for a year, and should be thawed in the refrigerator the day before you intend to use them. You might try freezing a few eggs and see if the results are acceptable to you.
I could suggest freezing eggs (good instructions here; http://www.food.com/recipe/freezing-eggs-153034) I am going to try that without salt. Some say a bit of salt keeps the eggs from being grainy. My eggtra eggs I am bartering to a few neighbors for berries and other produce. Keep that in mind ;-) Nice blog you have. Toodie
Angel Food Cake, you can use up to 18 of those babies making one depending on how big the whites are. Or a big old quiche that takes a lot of eggs too!
We are in the same boat. If you find some, please share.
